Manufacturing process

  1. Mincing chilled on duty mincer meat to obtain particles 20 mm diameter
  2. Adding iced water with brine
  3. Mixing until complete brine absorption
  4. Adding fiber at the end of mixing
  5. Final mincing on sieve 3-5mm for a requested shape enabling easy packing on trays
